AN IDEA WAS BORN: IT STARTED WITH A RESTAURANT

Lei and I met in the sixth grade and have been friends for almost 20 years now. We share the same love for adventure. We traveled together before but always talked about saving Europe for the "big trip of our thirties."

One day we were sitting around talking about a season two episode of "Anthony Bourdain: Parts Unknown" filmed in Copenhagen, Denmark. In this episode he visits Noma.

Noma is a two-Michelin-star restaurant run by chef and part-owner Rene Redzepi. Its focus is on foraging, fermentation and the sourcing of local ingredients - specifically from the Nordic region. Noma was voted Best Restaurant in the World in 2010, 2011, 2012 and 2014. Since then it has maintained its spot in the top five.

We made it a goal that we would go to Denmark and eat there one day. The idea of our Europe trip was born and everything would revolve around our visit to this one restaurant.
